Crispy Kale Chips

Sometimes its hard to eat things that are good for you,  so today I decided to try and make some crispy kale chips so I could have them to munch on during RuPaul’s Drag Race tonight (#TeamPearl)

What you’ll need:

– large bunch of kale (any kind, I used black kale)

– 2(ish) tablespoons of Olive Oil

– 1 1/2 tsp kosher salt

– 1/2 tsp paprika

– 1/4 cup finely grated cheese (I used an Irish cheddar)

The trick to these chips is low and slow.  Preheat the oven to 300 degrees and make sure your rack is placed in the middle.

Remove stems/ribs from kale and tear into pieces. Rinse and pat completely dry.

Take kale and place in large bowl.  Toss with olive oil and rub to ensure each chip is fully coated.  Next, toss with kosher salt and paprika

Place chips on parchment lined baking sheet and sprinkle with cheddar

Into the oven for 20-25 min until crispy

And voila!  A relatively healthy snack that is delicious

On a side note, the inspiration for the kale chips came from my delivery that came today from Mama Earth Organics
In this week’s order I received kale, asparagus, snap peas, apples, oranges, rhubarb and fiddleheads.

Homemade Stuffed Crazy Bread sticks

These are evil.  But they’re so good! After a few different attempts (too doughy, too cheesy) I think I’ve created a recipe that tastes juuuuuuuuust right. You’ll need:

  • fresh pizza dough (either make your own or pick some up from your local grocer or bakery)
  • 9 mozzarella cheese strings
  • 2 tbsp of butter
  • 1/4 tsp garlic powder
  • 1 tsp Mrs. Dash Garlic and Herb seasoning
  • 1/4 tsp dried parsley
  • grated parmasean cheese (as desired)

Pre-Heat oven to 425 degrees and spray baking sheet with vegetable oil or use parchment paper.
Melt butter and add garlic powder, Mrs. Dash and parsley, then set aside.

Separate dough into 6 equal parts and roll into ovals on a floured surface.
Break the 9 mozzarella sticks and into halves.  (Each bread stick will get 1 1/2 cheese string)

Fold mozzarella into the dough, ensuring you pinch seams tightly
Place bread sticks onto your baking sheet and brush with garlic butter mixture. Bake for 18 minutes on a middle rack.

With 5 minutes to go, remove them from the oven, brush with garlic butter again and sprinkle parmesan cheese (as desired)
Back into the oven for the last 5 minutes until golden brown.

Serve with favourite dipping sauce (I like garlic/basil tomato sauce)
